Baked Crispy Parmesan Zucchini


  • 4 medium zucchini, quartered lengthwise. 
  • ½ cup grated parmesan. 
  • 1 tbsp. olive oil, extra virgin. 
  • 1 tsp dried parsley. 
  • 1 tsp fresh thyme. 
  • 1/2 tsp garlic powder. 
  • Salt and ground black pepper.


  1. Preheat oven to 350F In a bowl mix Parmesan, olive oil, dried parsley, thyme, garlic powder, salt and black pepper. 
  2. Drizzle zucchinis with olive oil then dip in parmesan mixture. 
  3. Place zucchinis on a baking sheet. 
  4. Put inside the oven and bake for 15 minutes. Broil for 3 minutes until crispy. 
  5. Garnish with parsley.
