Grilled Chicken with Pineapple Salsa

Ingredients

  • 4 chicken breasts cut in halves. 
  • 2 tablespoons of olive oil. 
  • 1 tablespoon of lime juice. 
  • 2 cloves garlic, minced. 
  • Chopped parsley. 
  • ½ teaspoon salt and black pepper. 

For Salsa: 

  • 1 cup pineapple, grilled and diced. 
  • 1 cup sweet corn, grilled. 
  • 1 jalapeno, diced. 
  • ½ cup red bell pepper, diced. 
  • 2 shallots, diced. 
  • Lime juice. 
  • Pinch salt.

Instructions

  1. Massage the chicken with olive oil, lime juice, garlic, parsley salt and black pepper. Let it marinate for 20 minutes before grilling.
  2.  Preheat your grill. Using a brush the grill with olive oil. 
  3. Grill the chicken, 5 minutes for each side until charred. 
  4. In a mixing bowl add all the salsa ingredients and mix them well. 
  5. On a plate add the grilled chicken and top it with pineapple salsa. 
  6. Garnish with chopped parsley.
