Oven Roasted Okra

Ingredients

1 pound of okra, trimmed, cut in half. 

1 tbsp. olive oil, extra virgin. 

1 tsp fresh thyme. 

1/2 tsp garlic powder. 

Salt and ground black pepper.

Instructions

  1. In a bowl mix olive oil, thyme, garlic powder, salt and black pepper. 
  2. Toss in the okra make sure they are well coated. 
  3. Preheat oven to 400F Place on a baking sheet. 
  4. Drizzle with olive oil. 
  5. Roast in the oven for 20 minutes, shaking halfway through. 
  6. Adjust the salt to taste and serve hot.
