Pressure Cooker Pumpkin Puree
- 16 ounces sugar pumpkin, halved with seeds scooped out.
- ½ cup of water.
- In the bottom of the pressure cooker add ½ cup of water. Then place the rack with the pumpkin on it.
- Cook at high pressure for 15 minutes.
- Let it cool then scoop the flesh in a bowl.
- If you want it to be extra smooth, blend it in a blender then transfer it to a jar.
