Roasted Pumpkin


  • 1 small pumpkin or 1/4 large pumpkin, cut into 1-inch thick slices.
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 tablespoons packed brown sugar


  1. Preheat oven to 380F. 
  2. place the pumpkin into baking pan, frizzle with oil and season with cinnamon, nutmeg and brown sugar. 
  3. Transfer into oven and bake for 20 minutes until soft and carnalized.
